In an unexpected change, Glasgow’s Hazel restaurant, previously known for its fine dining, has teamed up with Machina Coffee from Edinburgh and Three Sisters Bake to reopen as a specialty coffee shop. Located at the intersection of John Street and George Street within the AC by Marriott hotel project, Hazel had thrived under the leadership of acclaimed chef Eric Avenier, becoming a beacon of Glaswegian hospitality.
This change follows extensive planning to meet the rising demand for quality coffee in the city center. With Machina Coffee, the award-winning Three Sisters Bake, and a prime central location, Hazel's manager, Katie Booth, is hopeful that the new concept will be popular with both locals and visitors.
Starting January 2024, Hazel will offer specialty coffee from 8 am to 5 pm, providing a new option for coffee enthusiasts. Steve Glencross, founder of Machina Coffee, is enthusiastic about expanding their footprint in Glasgow, a city he sees as ready for more specialty coffee shops.
Three Sisters Bake, known for their delicious baked goods like brownies, scones, and cookies, has built a loyal customer base since its founding in 2011 by Linsey, Nichola, and Gillian Reith. According to Glencross, the limited number of notable specialty coffee cafes in the city center makes Hazel a significant addition to Glasgow’s coffee landscape.
The new concept at Hazel will feature not just coffee but also fresh artisan goods from Three Sisters Bake, offering customers a complete café experience. Hazel's transformation into a coffee shop, in collaboration with Machina Coffee and Three Sisters Bake, has invigorated Glasgow’s hospitality sector.
